I have had great success using an immersion blender. everything , oil included, goes onto a beaker, turn the stick on and don’t move it until the emulsion begins and then slowly move it up and down to incorporate the oil.

Thanks for this tip. Great suggestion. I love my immersion blender but didn't think of it for this. Does it hold for long? Will try it.

I have had no separation problems. ?, 1 and 1/2 lemons seems like a lot of juice. I usually use the whole egg and 1Tbsp juice. Would that combo still be safe for 3/4 weeks? Thanks
